Truffled Pork & Mushroom

  • 1 package Tyson® Crafted Creations Four Cheese Pork Medallions
  • 1 Tbsp vegetable oil
  • 1 c yellow onions, diced
  • 1 tsp garlic paste
  • 1 (8 oz) carton sliced mushrooms
  • 2 1/2 tsp white truffle oil
  • 1 lb orecchiette pasta, cooked
  • 1/2 c parmesan cheese, shredded
  • Kosher salt, to taste
  • Ground black pepper, to taste

Pork Medallions skillet-cooked in Madeira wine sauce with caramelized onions, garlic, portabella mushrooms topped over orecchiette pasta tossed in truffle oil.

  1. Cook the pork medallions according to skillet instructions. Remove from skillet keeping warm.
  2. Using same skillet, heat oil and cook onions, garlic paste and mushrooms over medium heat. Toss truffle oil, pasta and pork in skillet until well-coated. Season with salt and pepper.
  3. Finish pasta with shredded parmesan and serve.
