Spicy Chicken and Tortellini Salad

  • 1 package Tyson® Crafted Creations®  Spicy Tomato Beer Thighs
  • 1 (12 oz) bag cheese tortellini
  • 1 bunch asparagus, cut into small pieces
  • ½ c green peas
  • 2 Tbsp extra virgin olive oil
  • 1 c grape tomatoes, halved
  • ¼ c minced shallots
  • 1 c crumbled feta cheese
Garlic Aioli Dressing
  • ¼ c prepared garlic mayonnaise
  • 2 Tbsp white wine vinegar
  • 2 Tbsp extra virgin olive oil

Skillet-seared chicken thighs diced and tossed with cheese-stuffed tortellini, grape tomatoes, diced shallots and asparagus with a garlic aioli dressing and feta cheese.

  1. Heat a well-oiled skillet over medium heat and cook the chicken thighs 20-25 minutes or until the internal temperature reaches 170°F. Rough chop the chicken, set aside.
  2. While the chicken is cooking, boil a large pot of water and cook the tortellini according to the package instructions. In the same boiling water, blanch the asparagus and peas for 1 minute. Drain the pot and run cold water to help stop the cooking process. Pour into a bowl and toss with olive oil, refrigerate until cold. Once cold add the tomatoes, shallots, cheese and chicken.
  3. Combine the ingredients for the dressing and toss with the pasta salad. Serve cold or chilled.
