Spanish Stuffed Peppers

  • 1 package Tyson® Crafted Creations® Chicken Fajita Strips
  • 4 red bell peppers, halved & seeded
  • 1 c cooked Spanish rice
  • 1 c canned black beans, drained
  • 1 ½ c shredded Mexican blend cheese, divided
  • 1 c prepared salsa
  • ¼ c fresh cilantro leaves

Charred chicken breast fajita strips with flavorful Spanish rice and black beans stuffed into red bell peppers and slow-grilled to perfection. Served with tomato salsa and fresh cilantro.

  1. Preheat your outdoor grill at a high heat (450-500°F). Place a grill approved cooking mat or double lined foil on one side of your grill. Spray with vegetable cooking spray and spread out the chicken strips. Cook until the strips are cooked throughout, about 10-15 minutes. *Optional: you can remove the strips from the mat/foil and place on the grill grates. Be careful of the small pieces dropping through the grates.
  2. While the chicken is cooking, combine the rice, beans and ½ cup of cheese in a mixing bowl. Stuff in the pepper halves, only half way. Place the peppers in cast iron pans/ cast iron grill pans or grill approved pans. Start cooking on the opposite side of the grill from the chicken. Once the chicken is finished, top the stuffed peppers and finish with remaining cheese. Cook for 15 minutes, and pour in 1 cup of water into each pan cook for an additional 15 minutes. Keep the cover/lid down on the grill during the cooking process.
  3. Finish with salsa and cilantro, enjoy!
