Pork, Pesto & Gnocchi

  • 1 package Tyson® Crafted Creations Four Cheese Pork Medallions
  • 1 (16 oz) package gnocchi with potato, cooked
  • 1 Tbsp vegetable oil
  • 1/4 c yellow onion, diced
  • 1 tsp garlic paste
  • 1/4 c basil pesto
  • 1/4 c parmesan cheese, shredded
  • 2 Tbsp pine nuts, toasted
  • 1 c fresh kale, packed

Pork Medallions skillet-cooked with potato gnocchi dumplings finished with homemade pesto of fresh basil, Parmesan, toasted pine nuts and olive oil with shaved pecorino cheese.

  1. Cook pork medallions according to skillet instructions. Remove from skillet and keep warm.
  2. Using same skillet, heat oil and cook onions for 2 minutes over high heat. Add garlic paste and gnocchi. Remove from heat. Add pesto, Parmesan cheese, pine nuts, kale and toss.
  3. Top gnocchi with pork medallions and serve.
