Mexican Beef Tortilla Soup

Ingredients
  • ½ (2lbs.) vacuum pack Crafted Creations Seasoned Beef for Fajitas
  • ½ c diced onions
  • 1 Tbsp minced garlic
  • 1 roma tomato, diced
  • 1 Tbsp tomato paste
  • 3 c beef stock
  • 2 Tbsp diced jalapeno
  • ½ tsp ground cumin
  • ½ tsp kosher salt
  • ¼ tsp ground black pepper
  • ⅛ tsp ground cayenne pepper
  • 1 (15.5 ounce) can white hominy
Garnishes
  • Sour cream
  • Shredded lettuce
  • Pico de gallo
  • Tortilla strips

Simply grill the beef to the desired doneness, dice it up and serve inside a tortilla soup consisting of chicken broth, jalapenos, onion, garlic, sour cream and crunchy tortilla strips.   1. Cook beef according to package instructions and thinly slice about ¼ inch thick.
  2. While cooking the beef, spray a large sauce pot with cooking spray and heat over medium-high heat. Sauté onion and garlic for 3-4 minutes stirring often, add tomato and tomato paste continue heating. Deglaze with stock and season with jalapeno, cumin, salt, black and cayenne pepper. Bring soup to a boil and let boil for 5 minutes. Reduce heat to low and let simmer for 30-35 minutes.
  3. Stir in the cooked beef and hominy, let heat for an additional 10 minutes. Finish soup with your own flare using the recommended garnishes.
