Kale Gratin

  • 1 package Tyson® Crafted Creations Pork Sparerib Mini-Racks Smokehouse or Applewood
  • 3 ounces kale, clean
  • 2 c cream
  • 2 Tbsp unsalted butter, melted
  • 1 tsp garlic powder
  • ½ tsp kosher salt
  • 1 c shredded mozzarella cheese
  • ¼ c shredded parmesan cheese
  • Ground black pepper to taste

Hand torn pieces of kale with a cream reduction with mozzarella and parmesan cheese topped with toasted brioche bread crumbs.

  • Cook ribs according to package instructions.
  • For gratin: heat the oven at 350°F. Prepare a baking dish with vegetable cooking spray.
  • Mix kale in the baking dish with cream, butter, garlic, salt and pepper. Gently fold in mozzarella cheese and top with the parmesan cheese. Cover and cook for 45 minutes. Uncover and toast the top for 5 minutes. Serve with the ribs.
