  • 1 package Tyson® Crafted Creations®  Green Chili Fusion Pork Sirloin Filet
  • 1 Tbsp vegetable oil
  • 4 1/2 oz pork chorizo
  • 1/4 c diced yellow onion
  • 1 Tbsp garlic paste
  • 1 Tbsp hatch green chilies, roasted
  • 1 (16 oz) can pinto beans, drained
  • 4 English muffins, split
  • 1/2 c shredded Chihuahua cheese
  • 8 eggs, fried
  • 2 c salsa verde
Wasabi Mashed Potatoes

  • 2 lbs russet potatoes, cooked
  • 1/4 c unsalted butter
  • 3/4 c cream
  • 1 1/2 tsp salt
  • 1 1/2 tsp soy sauce
  • 2 tsp wasabi powder
  • Black pepper to taste
  1. Heat butter, cream, salt, soy sauce and wasabi in a small sauce pot; whisk until well incorporated.
  2. Mash the cooked potatoes and stir in the cream mixture. Season with black pepper to taste. Serve with Green Chili Fusion Pork Sirloin Filets.

Pork sirloin layered with beans, hatch green chilis and Chihuahua cheese on toasted English muffins with fried eggs.

  1. Cook the pork according to package instructions. Slice thin and set aside (keeping warm) until use.
  2. Heat oil in a large skillet over medium-high heat. Cook the chorizo, onion, garlic and chilis for 7-10 minutes, stirring often. Add the beans and heat for an additional 5 minutes.
  3. Toast the English muffins in a toaster oven or on stove top.
  4. Build the Huevos Rancheros by layering the chorizo and bean mixture on the toasted English muffins. Divide the cheese, the pork slices and the fried eggs. Heat a medium skillet over high heat. Once the skillet is hot, carefully pour in the salsa verde and stir for 1 minute. Finish the dish by pouring the fried salsa over the top of the eggs.
