  • Cook the ribs according to package instructions.
  • *For peeled tomatoes; prepare an ice bath by filling a large bowl with ice and water, set aside. Bring a pot of water to a boil. Slice an “X” on opposite side on the core. Place the tomatoes in the boiling water for 30-40 seconds. Carefully remove the tomatoes with a slotted spoon and immediately place into the ice bath. The skin will start pulling away from the meat of the tomato. Once the tomatoes are cooled, use a paring knife and carefully remove the skin. Remove the core and dice into small pieces.
  • Heat a large, well-oiled skillet over medium and cook the tomatoes and onions for 10 minutes, stirring often. Add in peach nectar and peaches, continue to heat for an additional 10 minutes. Pour the contents into a blender, add the remaining ingredients and pulse until well combined.
  • Place the skillet back on the stovetop. Heat on high. Once the skillet is hot, pour the blended sauce back into the skillet, stirring often, for 1-2 minutes. Serve hot or cold with the sparerib mini-racks.
