Grilled Steak Flatbread

Ingredients
  • ¾ (1 ¼-1 ½ lbs.) vacuum pack Mesquite Flat Iron Steak
  • ½ cup white wine vinegar
  • ¼ cup sugar
  • ½ thinly sliced red onion
  • 1 cup baby arugula
  • 1 tablespoon olive oil
  • 1 (12 inch) thin pizza crust
  • ¼ cup prepared steak sauce
  • 1 tablespoon roasted garlic paste or 3 large roasted garlic cloves, smashed
  • ½ cup crumbled blue cheese
  • ½ cup shredded mozzarella cheese

This recipe is great as a quick meal for two or as a premium appetizer for your next party.  Thinly spread your favorite steak sauce or glaze over flatbread, add blue cheese crumbles, and bake until cheese is melted. Prepare steak to desired doneness, slice and add to flatbread with sautéed red onions and fresh arugula.

  1. Grill steak according to package instructions, slice thinly.
  2. Combine vinegar and sugar in a small saucepan and bring to a boil. While the vinegar and sugar are coming to a boil, place red onion in a bowl and rest bowl in an ice bath. Pour boiled liquid over onions and let sit for 20 minutes. Drain onions and toss with arugula and olive oil.
  3. Spread steak sauce over crust with garlic paste, then spread blue cheese and mozzarella and finish by evenly distributing slices of cooked steak.
  4. Heat the pizza on the grill over indirect heat for 7-10 minutes, rotating often to prevent over-browning. Place arugula mix on top after removing from heat.
