Ingredients
  • 1 (2lbs.) vacuum pack Crafted Creations Seasoned Beef for Fajitas
  • ½ c diced poblano pepper
  • ½ sweet onion, thinly sliced
  • ½ c chicken stock
  • 2 Tbsp minced fresh jalapeno
  • 1 c shredded Chihuahua cheese
  • 6 flat tostada shells
Ranchero Sauce
  • 2 Tbsp unsalted butter
  • ⅓ c diced onions
  • ½ c diced green bell pepper
  • 1 Tbsp minced garlic
  • ½ c chicken stock
  • 2 (8 oz) cans tomato sauce
  • ¼ tsp ground black pepper
  • ½ tsp kosher salt
  • ½ tsp ground cumin
  • ⅛ tsp ground cayenne pepper

Finally! A casserole the whole family will love. Tyson® Crafted Creations® Seasoned Beef (or Pork) for Fajitas is grilled until just done, chopped into small pieces, then mixed with ranchero sauce, shredded cheese, caramelized onions, fresh jalapenos, roasted poblano peppers, and crushed tortilla chips. The casserole is finished with a drizzle of Mexican hot sauce.

  1. Cook meat according to package instructions and thinly slice about ¼ inch thick.
  2. While cooking the beef, spray a large skillet with cooking spray and heat over medium-high heat. Sauté the poblano pepper and onion for 3-4 minutes stirring often. Add stock and jalapeno, heat for an additional 8-10 minutes or until liquid has evaporated.
  3. In a clean skillet heat butter over medium-high heat. Sauté onions, peppers and garlic for 3-4 minutes stirring often. Add stock, tomato sauce and season with black pepper, salt, cumin and cayenne pepper. Heat sauce for 10-12 minutes.
  4. Preheat oven at 400°F. Spray a 9x9” baking dish with non-stick cooking spray and pour about ¼ cup of sauce to cover the bottom of the dish. Place 2 tostada shells on the bottom of the dish and layer with meat, vegetable mix, cheese and sauce. Repeat the layers with the remaining ingredients. Cover dish with foil and cook in the oven for 30 minutes, remove and cook uncovered for an additional 15-20 minutes.
