Ingredients
  • 1 (1 ½-2 lbs.) vacuum pack Crafted Creations Steakhouse Beef Tri-Tip
  Smoky Blue Cheese Au Gratin Potatoes
  • 1 cup heavy cream
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ½ cup shredded white cheddar cheese
  • ¼ cup crumbled blue cheese
  • 1 pound peeled and thinly sliced russet potatoes
Roasted Shallot Beef Gravy
  • 1 tablespoon oil
  • 1 shallot (about 2 tablespoons), minced
  • ¼ cup unsalted butter
  • ¼ cup all-purpose flour
  • 2 cups beef broth or stock
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper

Grilled Steakhouse Tri-Tip served with Roasted Shallot Beef Gravy and Smoky Blue Cheese Au Gratin Potatoes.

  1. Cook tri-tip according to package instructions.
  2. Preheat oven at 400°F. Heat the cream in a sauce pot over medium and whisk in salt, pepper and cheeses until melted. Layer potatoes and cream mixture in a baking dish and bake for 35-45 minutes or until potatoes are tender.
  3. Heat the oil in a skillet over medium. Cook the shallot for 1-2 minutes, melt butter and stir in flour until well incorporated. Whisk in remaining ingredients and heat for an additional 3-5 minutes or until thick.
