Chicken Fajita Tacos

  • 1 package Tyson® Crafted Creations® Chicken Breast Fajita Strips
  • 1 (12.6 oz) package mini corn tortillas
  • 1 c diced white onions
  • ¼ c freshly chopped cilantro
  • 2 Tbsp lime juice
  • Salt and pepper to taste
  • ¼ c crumbled cotija cheese
  • ½ c sour cream
  • 1 tsp hot sauce

These tailgate-ready tacos feature grilled chicken breast fajita strips nestled in mini corn tortillas with crumbled cotija cheese and fresh onion, lime and cilantro salsa.

  1. Heat a large skillet over high heat and cook the chicken strips until golden in color, about 10-15 minutes. Set aside, keeping warm over a low heat.
  2. In a second skillet, toast the tortillas just until warm. Keep the tortillas warm by wrapping them in damp paper towels in a kitchen towel or linen napkin.
  3. Combine the onions, cilantro and lime juice in a mixing bowl. Season with salt and pepper.
  4. Build the tacos with two tortillas each dividing the chicken between the tortillas with the onion cilantro and lime salsa.
  5. Finish the tacos by combining the sour cream and hot sauce in a mixing bowl and place a dollop on the tacos or serve on the side.
