Chicken Fajita Eggrolls

  • 1 package Tyson® Crafted Creations® Chicken Breast Fajita Strips
  • 2 Tbsp oil
  • 8 eggroll sheets
  • 14 oz green or red enchilada sauce
  • 1 c shredded Pepper Jack cheese
  • Spanish rice, cooked according to package instructions

Skillet-charred chicken breast fajita strips create a flavor fusion when nestled in eggroll wrappers and smothered in enchilada sauce with Pepper Jack cheese. Served over Spanish rice.

  1. Preheat oven to 375°F
  2. Heat a large skillet over high heat and cook the chicken strips until golden in color, about 10-15 minutes, set aside on a stack of paper towels to drain the natural juices.
  3. Lay out the eggroll sheets on a clean work surface. Divide the chicken strips on one side of the eggroll sheets and carefully roll from one side to the other. Place the rolls into a greased 13x9” baking pan. Pour the sauce and top with cheese.
  4. Cook the enchiladas 25-35 minutes, or until golden brown.
