Cheese & Pork Pasta Carbonara

  • 1 package Tyson® Crafted Creations Four Cheese Pork Medallions
  • 1/2 package Wright® Brand Bacon, diced
  • 1 tsp garlic paste
  • 3/4 box linguini pasta, cooked
  • 1 egg, beaten
  • 1/4 c prepared artichoke pesto
  • 1 c fresh spinach, packed
  • 1 c shredded sharp provolone cheese
  • 1/2 c shredded parmesan cheese
  • Kosher salt, to taste
  • Ground black pepper, to taste

Pork Medallions skillet-cooked with bacon lardo, fresh spinach and marinated artichoke hearts topped over egg tossed linguini, mozzarella and Parmesan cheeses.

  1. Cook pork medallions according to skillet instructions on package. Remove from skillet and keep warm.
  2. In the same skillet, cook the bacon with the garlic paste for 15 minutes, or until crisp. Remove from heat and stir in pesto and spinach.
  3. Toss hot, cooked pasta in mixing bowl with beaten egg until completely coated. Add bacon and spinach mixture, cheeses and season with salt and pepper.
  4. Serve pork medallions in bed of pasta.
