Carnitas Ragu De Polenta

  • 1 package Tyson® Crafted Creations® Pork Shoulder for Carnitas
  • 1 (15 oz) can diced tomatoes
  • 1/2 c diced yellow onion
  • 1 tsp garlic paste
  • 1 (24 ounce) roll prepared polenta
  • 1 c fresh cilantro leaves, packed

Slow-cooked shredded Pork Shoulder for Carnitas and gazpacho soaked in melted tomatoes, cilantro puree, caramelized onions and garlic over creamy corn polenta.

  1. Cook the pork shoulder according to package instructions. When the pork is finished, shred half of the pork using two forks and keep warm in the natural juices. Reserve the second half for another meal.
  2. Prepare the polenta according to package instructions.
  3. Set a large well-oiled skillet over medium-high heat. Cook the tomatoes, onions, garlic paste and pork for 10 minutes; stir in the cilantro leaves and pour over the hot polenta.
*Tip: Finish this dish with your favorite mozzarella, cotija or queso fresco cheeses.
