Carnitas Fry-Bread

  • 1 package Tyson® Crafted Creations® Pork Shoulder for Carnitas
  • 2 c vegetable oil, for frying
  • 2 (13.8 oz) cans refrigerated pizza dough, cut in half
  • 1 c shredded iceberg lettuce
  • 1/4 red onion, thinly sliced
  • 1/4 c fresh cilantro leaves
  • 1/2 c crumbled queso fresco
Chipotle Pepper Mayonnaise
  • 1/2 c mayonnaise
  • 1/2 tsp chipotle powder
  • 1 tsp honey

Slow-cooked Pork Shoulder for Carnitas shredded and pan-crisped, nestled in skillet-fried pizza dough with shredded iceberg lettuce, sweet onions, cilantro and chipotle pepper mayonnaise.

  1. Cook the pork shoulder according to package instructions. When the pork is finished, shred half of the pork using two forks and keep warm in the natural juices. Reserve the second half for another meal.
  2. Heat the oil in a large deep skillet over medium to medium-high heat. Once the oil is hot, carefully place the pizza dough into the oil. Try to keep the dough flat in the skillet, the corners may curl a bit. Cook the dough for 1-2 minutes per side, flipping with a set of tongs. The dough will turn a golden brown color and should be cooked throughout. Repeat with the remaining dough, and drain across paper towels. *If the dough starts turning a darker brown, lower the temperature of the oil by reducing the heat.
  3. Combine all the ingredients for the mayonnaise in a small bowl. Divide the mayonnaise between the fry-bread and spread evenly on the bottom. Layer the sandwich with the pork, lettuce, onions, cilantro and cheese.
