Ingredients
  • 1 (1 ½-2 lbs.) vacuum pack Crafted Creations Santa Maria Beef Half Tri-Tip
  • 4 large whole grain tortilla
  • 1 avocado, sliced
  • 2 cups diced tomatoes
  • 2 cups alfalfa sprouts
  • ½ cup arugula mayonnaise (recipe below)
  Arugula Mayonnaise
  • 1½ cups packed arugula
  • ½ cup olive oil mayonnaise
  • 1 teaspoon kosher salt
  • 1 tablespoon lemon juice

Try our Santa Maria Beef Half Tri-Tip chargrilled over an open flame and thinly sliced, then cozied up with fresh avocado slices, heirloom tomatoes and alfalfa sprouts in a whole grain tortilla with a creamy spread of arugula mayonnaise.

  1. Prepare tri-tip according to package grill instructions, thinly slice
  2. While cooking the beef, blend all ingredients for the mayonnaise in a food processor until smooth.
  3. On a clean work surface, lay out the tortillas. Evenly divide beef, avocado, tomatoes, sprouts and arugula mayonnaise in the center of each tortilla. Fold the bottom of the tortilla over the filling and pull towards the fold. Fold in the sides and roll tightly.
