Ingredients
  • ½ (1 ½-2 lbs.) vacuum pack Crafted Creations Steakhouse Beef Tri-Tip
  • 4 soft corn tortillas
  • ½ avocado, peeled and sliced
  • 1 tsp lime juice
  • Kosher salt and ground black pepper, to taste
  • ½ c queso fresco cheese, crumbled
Charred Corn Salsa
  • 3 ears fresh corn, grilled, then sliced off cob
  • 2 Tbsp lime juice
  • 2 Tbsp diced Anaheim pepper
  • 1 Tbsp diced jalapeno
  • ½ tsp kosher salt
  • ¼ tsp ground black pepper
  • ¼ c diced red onion

Tyson’s® Crafted Creations® Grilled Steakhouse Tri-Tip, Lime Marinated Avocado and Charred Corn Salsa – topped with crumbled queso fresco and served on a pan toasted corn tortilla.

  1. Cook tri-tip according to package instructions; slice thin.
  2. Heat a dry skillet over medium-low and toast the tortillas on both sides. Set aside; cover with a damp towel.
  3. Place the avocado in a small bowl and pour the lime juice over. Season with salt and pepper.
  4. Combine all ingredients for corn salsa, set aside.
To assemble, divide the tri-tip, avocado and salsa evenly between the tortillas; top with a sprinkling of queso fresco cheese.
