Ingredients
  • 1 (1 ½-2 lbs.) vacuum pack Crafted Creations Peppercorn Beef Half Tri-Tip
  • 5 strips diced Wright Brand bacon
  • ½ cup diced yellow onion
  • ⅔ cup water
  • 2 tablespoon all-purpose flour
  • 1 quart heavy cream
  • 2 cups shredded smoked cheddar cheese
  • 5 ounces crumbled blue cheese
  • 1 cup frozen peas
  • 1 (16 ounce) bag orecchiette pasta, cooked

This is more than just a side dish! Featured are pieces of beautiful grilled Peppercorn Beef Half Tri-Tip in creamy orecchiette noodles with studs of gorgonzola cheese and smoked cheddar cheese, all brought together in a bacon cream sauce with grilled onions and sweet peas.

  1. Cook tri-tip according to package instructions.
  2. Cook diced bacon and onion in a large skillet over medium-high heat, stirring often to help evenly cook. Add water to the skillet to help render the natural juices and let simmer for 5-10 minutes or until the water is cooked out. Stir in flour until well incorporated and then whisk in the cream; heat for 5-7 minutes or until liquid has thickened. Stir in cheddar and blue cheeses until melted. Lastly, add in the frozen peas and toss with cooked pasta. Serve with tri-tip.
