Ingredients
  • ½ (2lbs.) vacuum pack Crafted Creations Seasoned Beef for Fajitas
  • 1 Tbsp unsalted butter
  • ¼ c diced red onions
  • 12 oz queso blanco sauce or dip
  • 1 c chicken stock
  • 2 Tbsp tomato paste
  • 1 (4 oz) can roasted green chilis, drained
  • 1 ear fresh corn, grilled and shucked
  • 1 medium tomato, diced
  • 1 Tbsp sliced green onions

Simply grill the beef and slice into small cubes then combine with red onion, mild poblano peppers, grilled corn and Monterey jack cheese, and top with fresh scallions and tomatoes.   1. Cook beef according to package instructions and thinly slice about ¼ inch thick.
  2. While cooking the meat, heat butter in a large skillet over medium-high heat. Sautè onions for 3-4 minutes; stir in the queso blanco, chicken stock, tomato paste, chilies, corn and tomatoes. Reduce heat to low and heat dip for 10-15 minutes stirring often. Add meat to dip and let heat for an additional 5 minutes. Finish with green onions and serve with your favorite tortilla chips.
