Barbeque Chicken and Homemade Potato Fries

  • 1 package Tyson® Crafted Creations® Smoky Barbeque Chicken Drumsticks
  • 2 lbs russet potatoes
  • 1 bulb garlic
  • 2 shallots
  • 4 c (32 oz) canola oil
  • ½ c grated parmesan cheese
  • ½ tsp ground thyme
  • Salt and pepper to taste
  • ½ tsp red chili flakes

Barbeque chicken with a side of hand-cut potatoes, skillet fried with garlic cloves and red chili flakes before being tossed in grated parmesan cheese and dried thyme.

  1. Cook the chicken drumsticks according to package instructions.
  2. Boil a large pot of water with the potatoes, garlic and shallots until the potatoes are tender to the touch, not mash-able. Cut the potatoes into thin wedges and air dry the potatoes, garlic and shallots on a stack of paper towels.
  3. Heat the oil in a large skillet (with high edges) over medium to medium-high heat. Let the oil reach temperatures around 325-350°F. If you do not have a thermometer to test the oil, test it with one of the potato fries. If it starts to bubble quickly then add another handful of fries with garlic and shallots, but do not over crowd the skillet. Cook until the fries are crisp, about 2-3 minutes. Carefully remove everything from the skillet and drain on a stack of paper towels, repeat with remaining ingredients.
  4. While the fries are still hot, toss or sprinkle them with parmesan cheese and thyme. Season with pepper, salt and chili flakes. Enjoy with your drumsticks.
